“My husband I are very active and both of us work out almost everyday. We were both taking whey protein shakes daily – upwards of 4 scoops a day for me and 8 scoops a day for him. We took Marni’s Fit and Fabulous cooking class and took so much away with us! We started using the recipes from the class right away and we also switched from whey protein to SunWarrior sprouted vegan protein. We both noticed an increase in our energy levels. My husband works 10-hour shifts and drives an hour each way to work and he is normally exhausted when he gets home. After switching to more plant-based eating and to SunWarrior protein, he still had energy at the end of the day and didn’t need coffee to get through the afternoon! He noticed this immediately. We also both noticed we were recovering much faster from intense workouts! I was a great day yesterday and I truly enjoyed it and as well I came away with more confidence in how to prepare raw foods.  I am going to do more sprouting and buy the dehydrator — absolutely loved the sprouted hummus we had.  Marni’s Caesar dressing recipe is going to replace my regular recipe which has a lot of extra that we don’t need and certainly won’t miss with her delicious take on our favourite salad.  Thanks! Marni is a great teacher and resource I look to as I continue on my path to learning more about nutrition and raw foods.”

 

 

Chewy Chocolate Brownies

Ingredients

1 Cup spelt or cassava flour
1/2 Cup unsweetened cocoa powder
1 1/2 Teaspoon baking powder
1/4 Teaspoon sea salt
3/4 Cup maple syrup
1/2 Cup Applesauce or Apple Butter or soaked dates
1/3 Cup grapeseed or coconut oil
1/2 Cup coconut milk
1 1/2 Teaspoon vanilla extract
1/3 Cup Dark Chocolate Chips

 

Instructions

Preheat oven to 350F. Oil an 8×8 baking pan and set aside.

Measure oat flour into a large bowl, add the cocoa, baking powder, salt and whisk together

In a separate bowl, mix together maple syrup, applesauce and oil. Add the rice milk and vanilla extract and blend well.

Add the wet ingredients to the dry, using a rubber spatula to mix the ingredients until just blended. Stir in the chips

Pour the batter into the pan and smooth the top.

Bake for 35 minutes, or until tester in the centre comes out clean. Let cool before completely cutting.
